This handcrafted treat combines roasted walnuts, dried prunes, apricots, and thickened Rkatsiteli grape juice, following an ancestral recipe passed down through generations.

The preparation is entirely manual: the nuts are threaded by hand and repeatedly dipped into a warm grape cream called palouze, made from concentrated juice and wheat flour. As layers build up to 1.5–2 cm in thickness, the churchkhela is then air-dried for two weeks to achieve its signature chewy texture. The addition of Caucasian dried fruits brings a pleasant natural sweetness, softness, and a rich, well-balanced flavor.
